With the holidays here almost every one of my clients has been asking me for a "Healthy" holiday Eggnog recipe.
Every year I usually create a new version and here is what I've created for this year - it's dairy free and egg free so you can serve it to everyone - with all the taste without the extra sugar and calories!
2 cups unsweetened almond milk
2 cups canned light coconut milk
3 tablespoons pure maple syrup
4 teaspoons vanilla
1/4 teaspoon nutmeg
Pinch of sea salt
Optional: Cinnamon Stick
Combine the above ingredients in a medium pot over the stove.
Bring the mixture to a boil, then reduce the heat to a simmer (whisk continuously). Continue whisking while the liquid simmers (about 3-4 minutes).
Remove the pot from the stove and let cool uncovered.
Once cooled, place in an airtight jar in the refrigerator to chill for at least four hours before serving.
You can add a dash of nutmeg after serving and a cinnamon stick (optional)
