Ginger Limeade

This is soooo delicious (tastes like a refreshing, yummy mocktail, think caipirinha or mojito style ๐Ÿ˜) and is incredible for a little digestion and immunity boost.

INGREDIENTS (Serves 2)

โœ”๏ธ 2 tbsp honey

โœ”๏ธ 2 cups water, divided

โœ”๏ธ 1/2 tablespoon grated ginger (from about one 3-inch piece of ginger)

โœ”๏ธ 1/2 cup lime juice (from about 5 limes)

โœ”๏ธ 2 tbsp fresh mint leaves

DIRECTIONS

1. Heat honey and 1 cup of water in a small pan until the honey dissolves completely. Set aside to cool.

2. Grate ginger and add to the remaining 1 cup of water. Let sit for 15 minutes. Then strain out the grated ginger.

โ€จ3. Combine the Ginger infused water with the honey mixture. Add lime juice and fresh mint. Stir all the ingredients together and refrigerate until chilled.
