Keto Avocado Brownies
This self isolation and hibernating home has got me CRAVING chocolate! Here's a Keto/Paleo friendly brownie that fills you up with healthy fats without spiking your blood sugar like a traditional brownie. And most importantly - it satisfies that chocolate craving!
4 large eggs
2 ripe avocados
1/2 c. coconut butter (or you can use melted butter or ghee)
6 tbsp. unsweetened peanut butter or almond butter
2/3 c. keto-friendly sugar of your choice (I used Swerve) - if you aren’t doing a keto version you can use your sweetener of choice such as maple syrup, honey, coconut sugar etc.
2/3 c. unsweetened cocoa powder
2 tsp. pure vanilla extract
1/2 tsp. sea salt
2 tsp. baking soda
In a blender or food processor, combine all ingredients and blend until smooth.
Transfer batter to baking pan and smooth top with a spatula. You can use 8”-x-8” square pan with parchment paper or coat with an oil (I used coconut oil)
Bake at 350° until brownies are soft but not at all wet to the touch, 20 to 25 minutes
Let cool for 15-20 minutes before serving
