Leftover Turkey One Pot Soup
If you are like me and have lots of turkey leftover from the holidays, here's an easy one pot (or slow cooker!) recipe you can do that will not only use up that turkey but also nourish the body to balance out any overindulgences!

Ingredients
4 cups turkey or chicken stock
2 cups turkey cooked
1/2 medium onion finely diced
2 large carrots peeled and diced
1 rib celery chopped
1 teaspoon sea salt
1 teaspoon dried parsley
1/2 teaspoon minced garlic
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
Optional: Fresh parsley (to add on top)
Optional: 2 cups dry pasta, rice noodle or zucchini noodles
Method
Combine stock, spices and all chopped veggies to pot. Cook on medium heat until vegetables are tender. If adding in pasta you can do this at this point too!
Add cooked turkey and let simmer together for 5 minutes
Stir, serve and top with fresh parsley
